Ingredients

Salad

2 cups baby spinach Ìý

1 cup cherry tomatoes halved Ìý

185g tinned tuna, drained and flakedÌýÌý

4 baby bocconcini balls, halvedÌý

½ cup cannellini beans, canned, drainedÌý

½ cup basil leaves, tornÌýÌý

Dressing

1 Tbsp Olive oilÌýÌýÌý

2 Tbsp balsamic vinegar ½ cup basil leaves, tornÌýÌý

Salt and pepper to tasteÌý

Method

  1. In a small bowl or jar, add olive oil and vinegar, salt and pepper. Mix or shake well.ÌýÌý
  2. In a large bowl add all ingredients (except dressing) and toss gentlyÌýÌý
  3. Drizzle over dressing and mix well to coat all of the salad ingredients.ÌýÌý
