Ingredients

2 large eggs, boiled

1 ripe avocadoÌýÌý

Fresh lemon, squeezed

2 Tbsp flat leaf parsley, finely choppedÌý

Extra virgin olive oilÌýÌý

Salt and pepper to tasteÌý

2 slices Burgen Soy and Linseed bread, toastedÌý

Method

  1. Slice boiled eggs Ìý
  2. In a bowl, mash avocado with a fork. Add a good squeeze of lemon and season with salt and pepper.Ìý
  3. Toast low GI bread.Ìý
  4. As soon as toast is ready, spread avocado on top of toast. Layer with sliced egg.Ìý
  5. Drizzle with a little low extra virgin olive oil and garnish with parsley.Ìý
