Ingredients

Pork Souvlaki

1 kg lean pork fillet Ìý

60ml extra virgin olive oilÌý

80ml lemon juice, freshly squeezedÌýÌý

4 garlic cloves, crushedÌý

2 tsp rosemary, finely choppedÌý

2 tsp dried oreganoÌý

Freshly ground black pepper and saltÌýÌý

8 low carb wraps e.g., Simson’s Pantry low carb wraps

Easy Tomato Salad

600g tomatoesÌý

1 small red onion, finely slicedÌý

DressingÌý

1.5 tbsp extra virgin olive oil Ìý

1 tbsp white wine vinegarÌý

1 tsp Dijon mustardÌý

½ small garlic clove, crushedÌýÌý

Flat leaf parsley or basil leaves, tornÌý

Sea salt and black pepperÌýÌý

TzatzikiÌý

2 cups (500g) low fat Greek yoghurtÌý

1 small cucumberÌý

1 small clove garlicÌý

1 tbsp. finely chopped mintÌý

1 Tbsp finely chopped dillÌýÌý

2 teaspoons lemon juice, freshly squeezedÌýÌý

Freshly ground black pepper and saltÌý

Method

Pork Souvlaki

  1. To prevent burning, soak wooden skewers in water for 30 minutes.Ìý
  2. Chop pork fillet into bite size chunks.ÌýÌý
  3. Place pork in a large bowl along with all marinade ingredients. Ensure all pork pieces are coated with marinade.ÌýÌý
  4. Marinade in the refrigerator for at least 4 hours (or overnight)Ìý
  5. Thread pork onto wooden skewers and place on an oiled barbecue grill. Cook for approximately 5 minutes each side or until golden and cooked through.ÌýÌý
  6. Remove from barbecue, cover and allow to rest for several minutes.ÌýÌý

Easy Tomato SaladÌý

  1. In a small bowl or jar, add olive oil, vinegar and mustard. Mix or shake well.ÌýÌý
  2. Cut the tomatoes into thick slices. Arrange on a platter and scatter over red onion.ÌýÌý
  3. Drizzle over dressing and season with a pinch sea salt and pepper. Scatter basil or parsley over the salad and serve.ÌýÌý

TzatzikiÌý

  1. Rinse and trim the ends of the cucumber. Cut the cucumber in half lengthways and use a teaspoon to scoop out the seeds. Using a grater, grate the cucumber in a large bowl. Next, place the grated cucumber in a metal strainer and add a sprinkling of salt. Use the back of a spoon or your fist to squeeze out the excess liquid. Discard the liquid.Ìý
  2. Place strained cucumber in another bowl. Add all other ingredients and mix to combine.ÌýÌýÌý
  3. Garnish with a few dill or mint sprigs.Ìý

Assemble

Spread tzatziki on wrap bread. Add some salad and pieces of pork and wrap up. Alternatively, serve pork, salad, wrap bread, and tzatziki separately on a plate.
