Ingredients

100g salmon filletÌý

Fresh lemon juice, 1 TbspÌý

1 cup mixed salad leavesÌý

1/3 cup cannellini beansÌýÌý

2 tsp extra virgin olive oilÌý

1 tbsp balsamic vinegarÌýÌý

1 slice wholegrain bread, toastedÌý

2 Tbsp TzatzikiÌýÌý

Method

  1. Heat 1 tsp olive oil in a nonstick fry pan. Add salmon and sear on both sides for a few minutes, until cooked to your liking. Drizzle with lemon juice and season with black pepper.ÌýÌý
  2. Remove from the pan, and transfer to a dinner plate. Cut into pieces.Ìý
  3. Salad: toss salad leaves, cannellini beans, 1 tsp olive oil and balsamic vinegar into a bowl.ÌýÌý
  4. Cut wholegrain toast into 3 ‘fingers’.Ìý
  5. Add salad, toast fingers and tzatziki to dinner plate and serve.ÌýÌýÌý
