Ingredients

4 x 120g salmon fillets, skin onÌýÌý

2 x 200g punnets cherry tomatoesÌýÌý

1 large red capsicum, chopped into small piecesÌý

1 large zucchini, chopped into small pieces Ìý

1 large red onion, chopped into small piecesÌý

2 cloves garlic, finely chopped or crushedÌýÌý

1 tablespoon extra-virgin olive oilÌý

80g reduced fat feta cheeseÌý

Juice half one lemonÌýÌý

1 teaspoon smoked paprikaÌýÌý

2 teaspoon dried oreganoÌýÌý

Freshly ground sea salt and black pepperÌý

Method

  1. Preheat oven to 200C.Ìý
  2. In a baking dish or tray, add cherry tomatoes, red capsicum, zucchini, onion, garlic and fetaÌý
  3. Drizzle olive oil and juice of half a lemon over the vegetables. Add paprika, oregano and a twist of sea salt and black pepper. Use your hands to coat the vegetable mixture with the olive oil and spices.Ìý
  4. Next, lay the salmon fillets (skin side up) on top of the vegetable mixture.ÌýÌý
  5. Squeeze juice of half a lemon over the salmon filletsÌý
  6. Bake for approximately 25-30 minutes or until the salmon and vegetables are cooked.ÌýÌý
