Ingredients

4 large eggs, poached or boiledÌý

2 tsp extra virgin olive oilÌý

1 tbsp. balsamic vinegarÌý

1 cup button mushrooms, halved (or quartered if large)Ìý

1 cup cherry tomatoesÌý

2 cups baby spinach leavesÌý

1 large clove garlic, crushedÌýÌý

4 Tbsp hummusÌýÌý

Salt and pepper for seasoningÌýÌý

Method

  1. Cook eggs to your liking. Cover and set aside.Ìý
  2. Heat tsp olive oil in a non-stick pan. Add mushrooms and a pinch of salt and pepper. Cook until browned. Add balsamic vinegar and sauté for another minute to caramalise the mushrooms.Ìý
  3. Next add 1 tsp olive oil, cherry tomatoes, spinach and garlic. Sauté for a few minutes. Spinach will wilt.ÌýÌý
  4. Add veggie mixture evenly to two bowls. Top with 2 eggs each and drizzle each with 2 tbsp hummus.ÌýÌý
