Ingredients

500g lean pork or beef mince Ìý

1 onion, dicedÌý

2 cloves garlic, crushedÌýÌý

1 large carrot, peeled and dicedÌý

1 zucchini, gratedÌý

1 cup brown lentils, rinsed and drainedÌýÌý

800g canned tomatoesÌýÌý

100ml red wineÌý

2 tbsp tomato paste, no added saltÌý

½ teaspoon smoked paprikaÌýÌý

1 teaspoon oreganoÌý

Salt and pepper for seasoningÌýÌý

1 tsp olive oilÌýÌý

Method

  1. In a large, non-stick pot heat olive oil on medium heat. Add onion and mince, breaking up the mince with a spoon, until the onions are soft and mince is browned.ÌýÌý
  2. Add garlic, carrots, zucchini, lentils, tomato paste, oregano and paprika cook for 3 minutes. Add the wine and tinned tomatoes and bring to the boil. Season with salt and pepper. Simmer on low and partially covered for approximately 15 minutes or until sauce has thickened.ÌýÌý
