Ingredients

6 skinless chicken thigh filletsÌý

Extra virgin olive oilÌý

1 small brown onion, choppedÌý

2 garlic cloves, finely choppedÌý

1 large red capsicum, choppedÌý

1 cup chopped mushroomsÌý

2 x 400g tins crushed tinned tomatoes, no added saltÌý

1/4 cup chicken stock, reduced saltÌý

1 tsp dried oregano leavesÌý

1/4 cup fresh chopped basil leavesÌý

Salt and freshly ground black pepperÌý

Method

  1. Trim chicken fillets so excess fat is removed.ÌýÌý
  2. Add olive oil to a large non-stick pan casserole pot and place on medium-high heat. Add the chicken thighs to the pan and sauté just until brown on each side. Set aside.Ìý
  3. Add the onion, garlic and capsicum to the pan and sauté over medium heat until the onion is tender. Next add mushrooms and cook another 3 minutes. Season with a pinch of salt and pepper.Ìý
  4. Add the chicken back to the pot along with the tomatoes, chicken stock, and oregano. Cover the pot and bring to a simmer.Ìý
  5. Turn heat to low and simmer for approximately 35-40 minutes, until the chicken is tender.Ìý
  6. Turn off heat and add chopped basil.Ìý
