Ingredients

2 teaspoons chipotle in adobo sauceÌý

½ teaspoon onion powderÌý

½ teaspoon ground cuminÌý

2 teaspoons extra virgin olive oilÌý

180g piece beef filletÌý

¼ large iceberg lettuce, washed, shreddedÌý

50g cherry tomatoes, quarteredÌý

125g can no-added-salt black beans, drainedÌý

½ small avocado (100g), dicedÌý

30g grated reduced-fat tasty cheeseÌý

1 tablespoon lime juiceÌý

2 tablespoons loosely packed coriander (cilantro) leavesÌý

Method

  1. Combine chipotle, onion powder, cumin and 1 teaspoon of the oil in a medium bowl. Add beef, turn to coat well. Refrigerate for 30 minutes.
  2. Heat a large frying pan, lined with a piece of baking paper, over medium-high heat. Cook beef for 3 minutes each side for medium or until cooked to your liking. Transfer to a plate; rest for 10 minutes. Thinly slice the beef.
  3. To assemble, divide lettuce between 2x750ml jars. Continue layering with tomatoes, black beans, avocado, sliced beef and cheese. Drizzle with combined remaining olive oil and the lime juice; top with coriander leaves. Seal jars with the lid.
  4. Refrigerate until ready to serve.
