Ingredients

1 tablespoon olive oilÌý

1 medium onion, choppedÌý

2 cloves garlic, crushedÌýÌý

1 tsp dried thymeÌý

1 tsp dried basilÌýÌý

Salt & pepper to tasteÌý

1 can diced tomatoes, no added saltÌý

4 cups vegetable or chicken stock, reduced saltÌýÌý

4 cups frozen mixed vegetables (peas, carrots, corn, green beans, etc.)Ìý

1 small potato, dicedÌý

2 cups cooked shredded chickenÌýÌý

Method

  1. Heat olive oil in a large casserole pot over medium heat. Add onion and cook for several minutes until softened. Stir in garlic and cook another 30 seconds.Ìý
  2. Stir in thyme, basil, salt, and pepper. Add canned tomatoes and stock and stir well to combine.Ìý
  3. Add frozen vegetables, potato and chicken.Ìý
  4. Bring to a boil, then lower the heat and simmer for 20–25 minutes or until vegetables are cooked.Ìý
  5. Ladle into serving bowls.Ìý
