Ingredients

2 cups green cabbage, shreddedÌýÌýÌýÌý

1 cup carrot, shreddedÌýÌý

4 spring onion, finely chopped Ìý

¾ cup chopped pineapple (fresh or canned) OR 1 small mango, thinly sliced Ìý

200g chicken, cooked (can use skinless bbq chicken) Ìý

¼ cup slivered almonds, toasted Ìý

¼ cup finely coriander, choppedÌýÌýÌýÌý

Dressing:Ìý

1 Tbsp olive oilÌýÌý

2 Tbsp white wine vinegarÌýÌý

1 tsp American mustardÌýÌý

Twist salt & black pepper ÌýÌý

Method

  1. In a small bowl or jar, add olive oil, vinegar, mustard, salt and pepper. Mix or shake well.ÌýÌý
  2. In a large bowl add all ingredients (except dressing) and toss gently.Ìý
  3. Drizzle over dressing and mix well to coat all of the salad ingredients.ÌýÌý
